One thing you should be quick about it though is asking your partner to slow things down without hurting them. If this person is truly important to you, then you owe the relationship the honesty of admitting that you are simply uncomfortable with the fast pace it seems to be going.
You should, however, avoid saying things like "We need to take things slower" or "I need some space." These lines will usually set off alarms and make your partner think you are trying to get out of the relationship instead. The best thing to do is to be specific by saying that you have other things going on in your life as well that you need to pay your attention.
If work is keeping you tied up, say something like "I have a project that really needs my time right now so I can relax the next time we see each other." Or if you want to see a friend, try saying "My friend is having a rough time and I really would like to be able to help her."
If your partner presses on, try to make him or her relax by saying the time you will spend away from each other will keep your relationship healthy in the long run. And then make a plan to be with your date at a specific time when you will be more available. Never leave your partner hanging and thinking if your relationship is about to go south.
